Wine lovers will be begging for mercy as they get their hands on 2015 vintage Cabernets – there's so much concentration, flavor and structure that the elite wines (like Dylan's Ghost) are almost unfairly good. With the darkly powerful 2012 and the velvety class of 2013 preceding it, is the world ready for the combination of both in the extraordinary 2015?
About the wine
The 2015 vintage of Dylan's Ghost Hell Hollow is just straight-up ludicrous. Fans of this Cult-style Aaron Pott project know these wines can be sensational, but this is really going too far. In this bottling, Pott has combined the chiseled tannic structure of a First Growth Bordeaux with such clear, almost laser-etched Cabernet fruit that it feels like tasting the world's first 4D wine. It's so vivid. Like the historical 2012, and 2013 vintages, the "positively stunning" (Galloni) 2015 may run out to be Napa's greatest vintage yet. Each vintage of Dylan's flirts with perfection and each vintage is unique. When producing a wine which such prodigious raw quality, the only course is to bottle Unfined and Unfiltered. For drinking now, decant and serve with prime steak or rack of lamb – but don't miss the greatness ahead – stashing some for 5 and 10 years will not go unrewarded.

"Super dark purple, blackberry, black raspberry, framboise, fine grain espresso, dried sage and crushed vanilla bean translate to the senses. Bold but refined tannin that needs some time to soften and harmonize. This is a true stunner from a top-notch winemaker and extremely well priced amongst its peers. I would suggest waiting for this to come around in 2 to 3 years to imbibe. Lots of complexity going on, but a bit shut down at the moment. Pair with heartier cuisine, grilled meats and vegetables, roasted meats, stews and more. In one word, fantastic."

"Nestled between the rugged Mayacamas and Vaca mountains, and the small towns of Yountville and Rutherford; Oakville now produces a wide range of bold, elegant and complex wines highlighted by deep, rich and concentrated flavors, fine tannins and firm structure that typically command an elite price from wine lovers, connoisseurs and collectors around the world.
With these points in mind, one of the gems of the region is the Dylan’s Ghost 2015 Cabernet Sauvignon. Crafted by star winemaker Aaron Pott, this stunning new release features sultry aromas of black and blue fruits, fresh violets, cocoa, lavender, vanilla, roasted espresso beans and sandalwood. Deep, full-bodied and seamless on the palate, the wine offers concentrated flavors of black raspberry, fresh blueberry, dark cherry and cassis mixed with more subtle nuances of licorice, mineral, savory spices, velvety texture, fine tannins, and a long, luxurious finish. Generous, elegant and refined, it’s a perfect summary of what Oakville has to offer and a true pleasure to drink now or cellar for up to twenty years.
To match these complex flavors with food, try this wine with roasted vegetables, risotto with wild mushrooms, seared duck breast with berry reduction sauce, grilled ribeye steaks, rack of lamb, or dark chocolate truffles."
